Kidney Beans Dish (Khorak-e Loobia) Recipe

This is a very delicious and comforting food all year round. My mother used to make this dish frequently and it's one of my favorite side dishes too. I like to add a generous amount of lemon juice after beans have been fully cooked.
 
Ingredients:
Serves 4-6
 
2 cups kidney beans
2 large onions, finely chopped
5 cloves of garlic, crushed
2 tablespoons olive oil
1 1/2 cup tomato sauce
4 cups of water
Juice of 2 lemons
Salt and pepper to taste
 
 
Method:
 
Pick over the beans, wash and soak them in water overnight. 
Pour the water out and place beans in a pot, add 4 cups of water and cook for 25 minutes. 
Drain and add enough water to cover beans and cook for an hour. 
In a skillet saute onion and garlic in olive oil, add tomato sauce, salt and pepper, let it simmer on medium-low heat for 20 minutes. 
Add the content of the pot – onion, garlic and sauce mixture in the last fifteen minutes before the beans are done, reduce heat and simmer for another 15-20 minutes. 
Add lemon juice at the end, taste and adjust the seasoning.
Khorak-e loobia can be served warm or cold.
