Adasi - Persian Lentil Soup Recipe

Ingredients:
Serves 4-6
2 cups lentils
1 large carrot, peeled and diced
2 large celery stalks, diced
1 large onion, finely chopped
3 garlic cloves, minced
1/2 teaspoon turmeric
1/2 teaspoon oregano (optional)
3 tablespoons olive oil
Juice of a lemon
Salt and pepper to taste
Water
Method:
In a pan saute onion and garlic in oil over medium heat, add turmeric and stir well.
Add lentils, celery, carrots, 5-6 cups of water, oregano and mix thoroughly.
Cover and cook for 45 minutes on medium-low heat.
Add salt and pepper to taste and lemon juice. Taste and adjust seasoning.
Serve warm with bread.
